ANZAC Biscuits

It's ANZAC day today, so I made ANZAC biscuits.

  • 1 1/4 cups plain flour, sifted
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 3/4 cup desiccated coconut
  • 2 tablespoons golden syrup
  • 125g butter, chopped
  • 1/2 teaspoon bicarb soda
  1. Preheat oven to 180°C and line 2 cookie trays with baking paper.
  2. Place the flour, oats, sugar and coconut in a large bowl and stir to combine.
  3. In a small saucepan place the golden syrup and butter and stir over low heat until the butter has fully melted. Remove from heat.
  4. Mix the bicarb soda with 1 1/2 tablespoons water and add to the golden syrup mixture.
  5. Pour into the dry ingredients and mix together until fully combined.
  6. Roll tablespoonfuls of mixture into balls and place on prepared trays , pressing down on the tops to flatten slightly.
  7. Bake for 12 minutes or until golden brown.

Hey, I made some too! Our recipes are pretty similar. Yours look gorgeous - I think 12 minutes is the perfect time for biscuits to cook!

Yay for making ANZAC biscuits too! Yours may have been yummier than mine due to more oats and sugar, but these ones are pretty good still. I reckon ANZAC biscuit recipes are all pretty much the same, there are some that go all fancy and throw in things like macadamias, but the basic recipe is the same. Guess there's no other way to make them as good!

Yours do look really good, Hayley. And your photo is excellent!

I made some yesterday (using an AWW recipe) and they turned out fairly ordinary. Mind you I had to use margarine instead of butter, so that probably didn't help. At least Noel and the kids have been eating them happily enough.

Thanks Sumara. I suppose the good thing about "fairly ordinary" biscuits is that you won't be tempted to eat them all. It's good that the family were happy to eat them though... Must see if I can post some dairy free recipes for you.

I knew you would hate them Lisa! You know, for sisters who have pretty similar taste, it is amazing how much I love ANZAC biscuits and cookies & cream anything, and how much you hate both!
